Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente, usually about 10-12 minutes.

    Drain the Pasta

    Once cooked, drain the pasta in a colander and set aside. Reserve about 1/2 cup of pasta water for later use.

Preparing Vegetables

    Chop the Vegetables

    While the pasta is cooking, chop the bell peppers, zucchini, and carrot into bite-sized pieces. Halve the cherry tomatoes and separate the broccoli florets.

    Sauté the Vegetables

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the chopped vegetables (bell peppers, zucchini, carrot, cherry tomatoes, and broccoli) and sauté for about 5-7 minutes until they are tender but still crisp.

Making the Garlic Sauce

    Add Garlic

    Add the minced garlic to the skillet with the vegetables and cook for an additional 1-2 minutes until fragrant.

    Combine Sauce Ingredients

    Pour in 1 cup of vegetable broth and stir in the salt, black pepper, and red pepper flakes. Let the mixture simmer for about 3-5 minutes.

    Add Pasta and Cheese

    Add the cooked penne pasta to the skillet along with the reserved pasta water. Stir in 1 cup of grated Parmesan cheese and chopped fresh basil. Mix well to combine all ingredients.

Serving

    Serve the Pasta Primavera

    Serve the Pasta Primavera warm, garnished with additional Parmesan cheese and fresh basil if desired.
