Method

Bread Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 10 minutes until frothy.

  2. 2

    Mix Ingredients

In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and add the activated yeast mixture and olive oil.

  3. 3

    Knead the Dough

Mix until combined, then knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

  5. 5

    Shape the Bread

Punch down the risen dough and shape it into a loaf or rolls. Place on a baking sheet lined with parchment paper.

  6. 6

    Second Rise

Cover the shaped dough with a cloth and let it rise for another 30 minutes.

  7. 7

    Bake the Bread

Preheat the oven to 375°F (190°C). Bake the bread for 25-30 minutes, or until golden brown and sounds hollow when tapped.

Timba Preparation

  1. 8

    Prepare the Filling

In a skillet over medium heat, cook the chorizo sausage until browned. Drain excess fat and let it cool.

  2. 9

    Mix the Timba

In a bowl, combine the cooked chorizo, cream cheese, roasted red peppers, fresh cilantro, lemon juice, and black pepper. Mix until well combined.

  3. 10

    Assemble the Dish

Once the bread is baked and cooled slightly, slice it open and generously spread the Timba mixture inside.

  4. 11

    Serve

Cut the bread into portions and serve immediately while warm.
