Preparation of Mojo Aioli

    Make the Mojo Aioli

    In a medium bowl, combine the mayonnaise, minced garlic, lime juice, chopped cilantro, salt, and black pepper. Mix well until smooth and creamy. Taste and adjust seasoning if necessary.

Assembling the Sandwich

    Prepare the Ingredients

    Thinly slice the onion and set aside. If the lechon is not pre-cooked, roast it until tender and juicy according to your preference.

    Slice the Bread

    Cut the Cuban bread loaf in half lengthwise. You can also lightly toast the bread if you prefer a crunchy texture.

    Layer the Sandwich

    Spread a generous amount of the mojo aioli on both halves of the bread. Layer the sliced lechon evenly on one half of the bread, followed by the sliced onions and potato sticks.

    Final Assembly

    Top with the other half of the bread and press down gently. Cut the sandwich into manageable portions.
