Preparing the Oysters

Shuck the Oysters
Using an oyster knife, carefully shuck each oyster by inserting the knife into the hinge of the shell and twisting it to open. Be cautious of the sharp edges.

Place on Ice
Arrange the shucked oysters on a platter filled with crushed ice to keep them fresh and chilled.
Making the Ginger-Lime Mignonette

Combine Ingredients
In a small bowl, combine the grated ginger, fresh lime juice, red wine vinegar, minced shallot, chopped cilantro, salt, and black pepper. Mix well.

Let It Sit
Allow the mignonette to sit for at least 10 minutes to let the flavors meld together.
Serving

Serve with Mignonette
Spoon a small amount of the ginger-lime mignonette over each oyster just before serving. Enjoy immediately!
