Prepare the Mushrooms

Preheat the Oven
Preheat your oven to 200°C (400°F).

Clean the Mushrooms
Gently clean the mixed exotic mushrooms with a damp cloth to remove any dirt. Avoid rinsing them under water to prevent them from becoming soggy.

Roast the Mushrooms
Spread the seasoned mushrooms on a baking sheet in a single layer. Roast in the preheated oven for 15-20 minutes, or until they are golden brown and tender.
Prepare the Vegetable Base

Add Garlic
Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Add Tomatoes and Broth
Add the canned diced tomatoes and vegetable broth to the pot. Stir well to combine.

Add the dried oregano, dried basil, and red pepper flakes. Stir well and bring the mixture to a simmer.

Reduce the heat to low and let the sauce simmer for about 10-15 minutes, allowing the flavors to meld together.
Combine and Serve

Once the mushrooms are roasted, add them to the simmering vegetable base and stir gently to combine.
