Mushrooms

Method

Prepare the Mushrooms

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F).

  2. 2

    Clean the Mushrooms

Gently clean the mixed exotic mushrooms with a damp cloth to remove any dirt. Avoid rinsing them under water to prevent them from becoming soggy.

  3. 3

    Season the Mushrooms

In a bowl, toss the cleaned mushrooms with olive oil, salt, and black pepper until well coated.

  4. 4

    Roast the Mushrooms

Spread the seasoned mushrooms on a baking sheet in a single layer. Roast in the preheated oven for 15-20 minutes, or until they are golden brown and tender.

Prepare the Vegetable Base

  1. 5

    Sauté the Vegetables

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes or until the vegetables are softened.

  2. 6

    Add Garlic

Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

  3. 7

    Add Tomatoes and Broth

Add the canned diced tomatoes and vegetable broth to the pot. Stir well to combine.

  4. 8

    Season the Sauce

Add the dried oregano, dried basil, and red pepper flakes. Stir well and bring the mixture to a simmer.

  5. 9

    Simmer

Reduce the heat to low and let the sauce simmer for about 10-15 minutes, allowing the flavors to meld together.

Combine and Serve

  1. 10

    Add the Roasted Mushrooms

Once the mushrooms are roasted, add them to the simmering vegetable base and stir gently to combine.

  2. 11

    Garnish

Taste the mixture and adjust seasoning if necessary. Garnish with fresh chopped parsley before serving.

  3. 12

    Serve

Serve the Old Clothes warm with crusty bread or over rice for a complete meal.
