Crust Preparation

    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs and sugar. Stir in the melted butter until the mixture resembles wet sand.

    Form the crust

    Press the crumb mixture into the bottom of a 9-inch springform pan evenly. Use the bottom of a measuring cup or glass to pack it down tightly.

    Bake the crust

    Bake the crust in the preheated oven for about 10 minutes. Remove and let it cool while you prepare the filling.

Filling Preparation

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar and mix until well combined.

    Add other filling ingredients

    Add the sour cream, vanilla extract, and flour to the cream cheese mixture, mixing until smooth. Add the eggs one at a time, mixing just until incorporated.

    Pour filling into crust

    Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

    Bake the cheesecake

    Bake in the oven for 60-70 minutes, or until the center is slightly jiggly but set. Turn off the oven and let the cheesecake cool inside for 1 hour.

    Chill the cheesecake

    Remove from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.

Topping Preparation

    Prepare the strawberry topping

    In a medium bowl, combine sliced strawberries, sugar, and lemon juice. Toss gently to coat the strawberries and let them sit for about 15 minutes to release their juices.

    Serve the cheesecake

    Once the cheesecake is chilled, slice and serve with the strawberry topping spooned over each slice.
