Prepare the Mushrooms
Clean and slice the mushrooms into thick pieces.

Prepare the Tomatoes
Preheat the oven to 200°C (400°F). Wash the cherry tomatoes and cut them in half.

Roast the Tomatoes
In a bowl, mix cherry tomatoes with olive oil, balsamic vinegar, salt, and black pepper. Spread them on a baking sheet and roast for 20-25 minutes until they are blistered and caramelized.
House-Made Herb Ricotta

Mix the Ricotta
In a bowl, combine ricotta cheese, chopped basil, chopped parsley, lemon zest, and salt. Stir until well combined and set aside.
Strata Assembly

Prepare the Strata Base
In a large mixing bowl, whisk together eggs and milk until well combined. Add cubed bread and mix gently to soak the bread.

Layer the Ingredients
In a greased baking dish, layer half of the soaked bread mixture, followed by all of the mushroom conserva, half of the roasted tomatoes, and half of the herb ricotta. Repeat with the remaining bread, tomatoes, and ricotta.

Bake the Strata
Preheat the oven to 180°C (350°F) and bake the strata for 35-40 minutes until the top is golden brown and the custard is set.

Serve
Let the strata cool for 10 minutes before slicing. Serve warm with the remaining roasted tomatoes on top.
