Mojo Aioli Preparation

Make the Mojo Aioli
In a medium bowl, combine mayonnaise, minced garlic, lime juice, orange juice, cumin, salt, and black pepper. Whisk until smooth and well combined. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare the Pork
If not already done, cook the Otto's pork according to your preferred method (slow-cooking or roasting) until tender. Once cooked, shred the pork with forks and set aside.

Pickle the Red Onion
In a small bowl, mix the sliced red onion with a splash of lime juice and a pinch of salt. Let sit for about 10 minutes to pickle slightly.

Fry the Eggs
In a skillet over medium heat, melt 1 tablespoon of butter. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up or over-easy). Season with salt and pepper.
