Preparation of Marinade

    Make the Mojo Marinade

    In a large mixing bowl, combine minced garlic, lime juice, olive oil, chopped cilantro, cumin, salt, and black pepper. Whisk together until well combined.

    Marinate the Chicken

    Place the whole chicken in a large resealable plastic bag or a deep dish. Pour the mojo marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

Roasting the Chicken

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Chicken for Roasting

    Remove the chicken from the marinade and place it in a roasting pan. Scatter the sliced onion around the chicken.

    Roast the Chicken

    Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the pan juices halfway through roasting.

Assembling the Mojo Chicken Sandwich

    Prepare the Bread

    Once the chicken is done roasting, let it rest for 10-15 minutes. Meanwhile, slice the Cuban bread in half.

    Assemble the Sandwich

    Shred the roasted chicken and layer it on the bottom half of the Cuban bread. Top with roasted onions, Swiss cheese, and drizzle with Otto's sauce.

    Close the Sandwich

    Place the top half of the Cuban bread over the filled bottom half and press down gently.

    Optional - Grill the Sandwich

    For a crispy exterior, grill the sandwich in a pan or on a griddle for about 5 minutes on each side until the bread is golden brown and the cheese is melted.
