Prepare the Yerba Mate
In a medium saucepan, bring 1 liter of water to a near boil. Remove from heat and let it cool slightly until it reaches around 70-80°C (158-176°F).

Infuse the Yerba Mate
Place 100 grams of yerba mate in a gourd or a French press. Pour the hot water over the yerba mate and let it steep for about 5 minutes.

Add Fresh Mint and Lime
While the yerba mate is steeping, wash and add 10 fresh mint leaves to a separate pitcher. Squeeze in 2 tablespoons of lime juice and add 2 tablespoons of honey. Muddle the mint leaves gently to release their oils.

Combine the Mixture
After the yerba mate has steeped, strain it into the pitcher with the mint, lime juice, and honey. Stir well to combine all the flavors.

Fill glasses with ice cubes (about 1 cup each) and pour the yerba mate mixture over the ice. Garnish with lime wedges for an extra burst of flavor.
