Method

Crust

  1. 1

    Prepare the Crust

Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1.5 cups of graham cracker crumbs, 0.5 cups of granulated sugar, and 0.5 cups of melted unsalted butter. Mix until the crumbs are evenly moistened. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust.

  2. 2

    Bake the Crust

Bake the crust in the preheated oven for 8-10 minutes, or until it is lightly golden. Remove from the oven and let it cool while you prepare the filling.

Filling

  1. 3

    Mix the Filling

In a mixing bowl, combine 1 can (14 oz) of sweetened condensed milk, 0.5 cups of freshly squeezed key lime juice, and 4 egg yolks. Whisk together until the mixture is smooth and well combined.

  2. 4

    Fill the Crust

Pour the key lime filling mixture into the cooled crust, spreading it evenly. Bake in the oven at 350°F (175°C) for 15 minutes. Remove from the oven and allow it to cool to room temperature, then refrigerate for at least 3 hours to set.

Whipped Cream Topping

  1. 5

    Prepare the Whipped Cream

In a mixing bowl, combine 1 cup of heavy whipping cream, 2 tablespoons of powdered sugar, and 1 teaspoon of vanilla extract. Using an electric mixer, whip the cream on medium-high speed until soft peaks form.

  2. 6

    Serve the Pie

Once the pie has chilled and set, slice it into wedges. Top each slice with a generous dollop of whipped cream before serving.
