    Prepare Quinoa

    Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

Vegetable Filling

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add Vegetables

    Add the diced bell pepper, zucchini, and grated carrot to the skillet. Sauté for 5-7 minutes until the vegetables are tender.

    Add Spinach

    Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted. Season with salt, black pepper, dried oregano, and dried thyme.

    Combine Ingredients

    In a large bowl, mix the cooked quinoa with the sautéed vegetable mixture until well combined.

    Prepare Pouches

    Preheat the oven to 375°F (190°C). Using parchment paper or aluminum foil, create individual pouches. Divide the quinoa and vegetable mixture evenly among the pouches.

    Add Toppings

    Top each pouch with crumbled feta cheese and a sprinkle of chopped parsley.

    Seal and Bake

    Seal the pouches tightly and place them on a baking sheet. Bake in the preheated oven for 20-25 minutes until heated through.
