Make the Dough
In a large bowl, mix all-purpose flour, sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Stir in the ice water, one tablespoon at a time, until the dough comes together. Shape into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling
In a medium bowl, combine guava paste, mascarpone cheese, vanilla extract, Isle of Fiji rum, and sugar. Mix until smooth and well combined. Set aside.
Assembling the Pastelitos

Form the Pastelitos
Preheat the oven to 375°F (190°C). On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into squares (approximately 4x4 inches). Place a tablespoon of the filling in the center of each square. Fold the dough over to form a triangle and seal the edges with a fork.

Egg Wash and Bake
In a small bowl, whisk together the egg and milk. Brush the egg wash over the tops of the pastelitos. Place on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
