Preparing the Marinade

    Mix Marinade Ingredients

    In a small bowl, mix together the olive oil, lemon juice, minced garlic, salt, black pepper, and dried thyme to create a marinade.

Marinating the Salmon

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure that the fillets are well coated. Cover with plastic wrap and refrigerate for at least 30 minutes.

Preparing the Vegetables

    Prepare Vegetables

    Wash and trim the asparagus. Slice the bell peppers into strips and the zucchini into half-moons. Season with a drizzle of olive oil, salt, and pepper.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Remove the salmon from the marinade and place it skin-side down on the grill. Cook for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

    Grill the Vegetables

    While the salmon is grilling, place the prepared vegetables on the grill. Grill for about 3-4 minutes, turning occasionally until they are tender and have grill marks.

Serving

    Once cooked, remove the salmon and vegetables from the grill. Serve the grilled salmon on a plate alongside the grilled seasonal vegetables.
