Calamari Preparation

Method

Calamari Preparation

  1. 1

    Prepare the Calamari

Begin by cleaning the calamari thoroughly. Slice the body into rings about 1/2 inch thick and make sure the tentacles are whole.

  2. 2

    Prepare the Breading

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

  3. 3

    Prepare Egg Mixture

In another bowl, beat the eggs and mix in the buttermilk until well combined.

  4. 4

    Coat the Calamari

Dip the calamari rings and tentacles first into the egg mixture, allowing any excess to drip off, then coat them in the flour mixture. Ensure they are evenly coated.

Frying

  1. 5

    Heat the Oil

In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 6

    Fry the Calamari

Carefully add the coated calamari to the hot oil in batches. Fry for about 2-3 minutes or until they are golden brown and crispy. Avoid overcrowding the pot.

  3. 7

    Drain the Calamari

Using a slotted spoon, remove the fried calamari and place them on a plate lined with paper towels to drain excess oil.

  4. 8

    Serve

Serve the fried calamari hot, garnished with fresh parsley and lemon wedges on the side for squeezing over.
