    Making the Caramel

    In a medium saucepan, combine the granulated sugar and water. Stir gently to mix.

    Cooking the Caramel

    Place the saucepan over medium heat. Allow the sugar to dissolve without stirring. Once it starts to boil, swirl the pan gently to ensure even cooking.

    Achieving the Right Color

    Continue cooking until the mixture turns a deep amber color (about 8-10 minutes). Be careful not to burn it.

    Pouring the Caramel

    Quickly pour the caramel into the bottom of a 9-inch round cake pan, tilting the pan to cover the bottom evenly. Set aside to let it harden.

    Whisking the Eggs

    In a large mixing bowl, crack the eggs and whisk them until well beaten.

    Adding Milk and Flavor

    Add the sweetened condensed milk, evaporated milk, vanilla extract, and a pinch of salt to the eggs. Whisk until the mixture is smooth and well combined.

    For a smoother texture, strain the mixture through a fine-mesh sieve into another bowl.

Baking the Flan

    Preheat your oven to 350°F (175°C).

    Pour the flan mixture over the hardened caramel in the cake pan.

    Place the cake pan in a larger baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the cake pan.
