For the Spiced Sweet Bread

    Prepare the Dough

    In a large mixing bowl, combine 4 cups of all-purpose flour, 1 cup of sugar, 2 tsp of active dry yeast, and 1 tsp of salt. Mix well.

    Heat the Milk

    In a small saucepan, warm 1 cup of milk until it's just about to boil. Remove from heat and let it cool to lukewarm.

    Combine Wet Ingredients

    In another bowl, whisk together 1 cup of duck fat, 2 large eggs, and 1 tsp of vanilla extract. Add the lukewarm milk to the mixture.

    Mix Wet and Dry Ingredients

    Pour the wet mixture into the dry ingredients. Add 1 tsp of ground cinnamon and 1 tsp of ground nutmeg. Stir until a dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and allow it to rise in a warm place for about 1 hour or until it has doubled in size.

    Prepare the Filling

    Once the dough has risen, punch it down and roll it out into a rectangle. Layer 8 oz of sliced ham and 8 oz of Swiss cheese evenly over the dough.

    Roll the Dough

    Starting from one end, carefully roll the dough into a log shape, ensuring the filling stays inside.

    Second Rise

    Place the rolled dough in a greased baking pan and cover it again with a damp cloth. Let it rise for another 30 minutes.

    Preheat the Oven

    While the dough is rising, preheat your oven to 350°F (175°C).

    Bake the Bread

    After the second rise, bake the bread in the preheated oven for about 30-35 minutes until golden brown.

    Cool and Serve

    Once baked, remove from the oven and let it cool slightly before slicing. Serve warm as a delicious dish with duck fat flavor.
