Prepare the Piquillo Pepper Coulis
In a blender, combine the piquillo peppers, olive oil, garlic, lemon juice, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Make the Croutons
Preheat your oven to 375°F (190°C). Cut the Cuban bread into small cubes. Toss the bread cubes with olive oil, garlic powder, and a pinch of salt until evenly coated. Spread on a baking sheet and bake for about 10-12 minutes, or until golden and crispy.

Assemble the Salad
In a large bowl, combine the seasonal greens and toss with the prepared piquillo pepper coulis until evenly coated. Top with the white anchovies and sprinkle the manchego cheese over the top.

Add the crispy Cuban bread croutons on top just before serving for added crunch and texture.
