Preparation Steps

  1. 1

    Prepare the Yuca

Peel the yuca using a sharp knife, ensuring to remove the tough outer skin. Cut the yuca into 2-inch pieces.

  2. 2

    Boil the Yuca

Place the yuca pieces in a large pot of salted water, covering them completely. Bring the water to a boil over medium-high heat and cook for about 20-25 minutes, or until the yuca is tender when pierced with a fork.

  3. 3

    Drain and Dry

Once cooked, drain the yuca and allow it to cool slightly. Pat the pieces dry with paper towels to remove excess moisture.

  4. 4

    Prepare the Oil Mixture

In a large, heavy-bottomed pot, pour in the vegetable oil. Add the garlic cloves and fresh thyme to the pot. Heat the oil over low heat until it becomes fragrant, about 5-7 minutes.

  5. 5

    Confiting the Yuca

Once the oil is fragrant, carefully add the dried yuca pieces to the pot. Ensure that they are fully submerged in the oil. Cook on low heat for about 30-40 minutes, turning occasionally, until the yuca is golden and soft.

  6. 6

    Seasoning

Once the yuca is done cooking, remove the pot from heat. Use a slotted spoon to transfer the confit yuca to a serving plate, allowing excess oil to drain off. Season with salt and black pepper to taste before serving.
