Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 220°C (425°F) and prepare four ramekins by greasing them with butter and dusting with flour.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in short bursts, stirring until smooth.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and large eggs until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture. Add the vanilla extract and mix until fully incorporated.

  5. 5

    Add Dry Ingredients

Sift in the flour and add a pinch of salt. Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Place the filled ramekins on a baking tray and bake in the preheated oven for 12-14 minutes. The edges should be firm but the center should still be soft.

  3. 8

    Cool Slightly

Remove the ramekins from the oven and allow them to cool for 1-2 minutes. This will help the cakes set slightly, making them easier to serve.

Serving

  1. 9

    Serve Lava Cake

Run a knife around the edges of each ramekin and carefully invert onto a plate. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
