Main Ingredients

For Frying

Method

Preparation

  1. 1

    Prepare the Pork Belly

Cut the pork belly into 1-inch cubes. Ensure that you include some skin, as this will help create the crispy texture.

  2. 2

    Season the Pork

In a large bowl, season the pork belly cubes with salt and lime juice. Mix well to ensure all pieces are coated evenly.

  3. 3

    Marinate

Let the seasoned pork belly sit for at least 30 minutes to allow the flavors to penetrate.

Cooking

  1. 4

    Boil the Pork

In a large pot, combine the marinated pork belly and water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 1-1.5 hours until the pork is tender.

  2. 5

    Drain and Dry

Once the pork is tender, remove it from the pot and drain well. Pat the pieces dry with paper towels to remove excess moisture.

  3. 6

    Heat the Oil

In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

  4. 7

    Fry the Pork

Carefully add the drained pork belly cubes to the hot oil in batches to avoid overcrowding. Fry until they are golden brown and crispy, about 5-7 minutes.

  5. 8

    Drain Excess Oil

Using a slotted spoon, remove the chicharrones from the oil and place them on a plate lined with paper towels to absorb excess oil.

  6. 9

    Serve

Serve the chicharrones warm, optionally with lime wedges and hot sauce on the side.
