Method
Preparing the Cheese Curds
- 1
Prepare the batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, salt, and black pepper. Whisk until well mixed.
- 2
Add sparkling water
Gradually add the sparkling water to the dry ingredients, whisking until a smooth batter forms. The batter should be thick enough to coat the cheese curds.
- 3
Heat the oil
In a large, deep pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
- 4
Batter the cheese curds
Working in batches, dip the cheese curds into the batter, ensuring they are fully coated.
- 5
Fry the cheese curds
Carefully drop the battered cheese curds into the hot oil, frying until golden brown and crispy, about 3-4 minutes. Use a slotted spoon to remove them from the oil and drain them on paper towels.
Making the Ranch Dressing
- 6
Mix the ingredients
In a medium bowl, combine the mayonnaise, sour cream, dried dill, garlic powder, onion powder, salt, black pepper, and lemon juice.
- 7
Whisk together
Whisk the mixture until smooth and well combined. Adjust seasoning to taste, if necessary.
Serving
- 8
Plate the cheese curds
Transfer the fried cheese curds to a serving platter.
- 9
Serve with ranch
Serve the cheese curds warm with the prepared ranch dressing on the side for dipping.
