Method

Preparation

  1. 1

    Prepare the Vegetables

Chop the red bell pepper, yellow onion, and tomatoes into small dice. Mince the garlic cloves and chop the cilantro roughly.

  2. 2

    Season the Fish

Rub the tilapia fillets with salt, black pepper, cumin powder, and paprika. Allow them to marinate for about 10 minutes.

Cooking

  1. 3

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes. Add the garlic and sauté for an additional minute.

  2. 4

    Add Peppers and Tomatoes

Add the diced red bell pepper and tomatoes to the skillet. Cook for about 5 minutes until the vegetables soften.

  3. 5

    Cook the Fish

Gently place the seasoned tilapia fillets in the skillet. Pour the vegetable broth over the fillets. Cover and let cook for 8-10 minutes until the fish flakes easily with a fork.

  4. 6

    Garnish

Remove the skillet from heat. Squeeze fresh lime juice over the fish and sprinkle with chopped cilantro before serving.
