For the Ginger-Pomegranate Sauce

Prepare the Sauce
In a small saucepan over medium heat, combine the grated ginger, pomegranate juice, honey, soy sauce, lime juice, and salt. Stir well to combine.

Simmer the Sauce
Bring the mixture to a gentle simmer and let it cook for about 10 minutes, or until it has thickened slightly. Remove from heat and let it cool.
For the Venezuelan Arepas

Mix the Arepa Dough
In a large bowl, combine the pre-cooked cornmeal, water, and salt. Mix with your hands until a dough forms. Let it rest for about 5 minutes.

Shape the Arepas
Divide the dough into equal portions and shape each portion into a ball, then flatten into discs about 1 inch thick.

Prepare the Filling
In a mixing bowl, combine the shredded chicken or beef with pomegranate seeds and chopped cilantro. Mix gently.

Assemble the Arepas
Slice the cooked arepas open like a pocket. Fill each arepa with the meat mixture and top with slices of avocado.

Drizzle the ginger-pomegranate sauce over the filled arepas or serve on the side for dipping.
