Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Rinse them under cold water and pat dry.
Roasting

Season the Brussels Sprouts
In a large bowl, toss the Brussels sprouts with olive oil, salt, and black pepper until evenly coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts out in a single layer on a baking sheet. Roast them in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, shaking the pan halfway through cooking.
Making the Balsamic Glaze

Combine Ingredients
In a small saucepan, combine balsamic vinegar and honey.

Cook the Glaze
Bring the mixture to a simmer over medium heat, then reduce the heat to low. Let it simmer gently for about 10-15 minutes, or until it thickens and coats the back of a spoon. Remove from heat and allow to cool slightly.
Serving

Plate the Brussels Sprouts
Once the Brussels sprouts are roasted, remove them from the oven and drizzle the balsamic glaze over them while they are still warm.

Serve immediately, garnished with additional black pepper if desired.
