Cook the Chorizo
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chorizo and cook for about 5-7 minutes, breaking it apart with a spatula until it is fully cooked and browned. Remove from the skillet and set aside.

Scramble the Eggs
In a mixing bowl, crack the 4 large eggs and whisk them together. Season with 1 teaspoon of salt and 1 teaspoon of pepper. In the same skillet, add the cooked chorizo back into the pan, then pour the eggs into the skillet. Stir gently with a spatula until the eggs are fully cooked and fluffy, about 3-4 minutes.

Assemble the Burritos
Lay out the large flour tortillas on a flat surface. Divide the scrambled egg and chorizo mixture evenly between the two tortillas. Sprinkle 1/2 cup of shredded cheese on top of the filling in each tortilla.

Roll the Burritos
Fold in the sides of the tortilla over the filling, then roll from the bottom up to encase the filling completely. Repeat with the second tortilla.

Serve with Salsa
Place the burritos on a plate and serve with 1 cup of salsa on the side for dipping. Enjoy your delicious breakfast burritos!
