Method

Plantain Cornbread

    Prepare the Plantains

    Peel and cut the ripe plantains into small pieces. Mash them thoroughly until smooth.

    Mix Dry Ingredients

    In a large bowl, combine cornmeal, all-purpose flour, baking powder, salt, and sugar. Mix well.

    Combine Wet Ingredients

    In another bowl, whisk together the mashed plantains, milk, eggs, and vegetable oil until fully combined.

    Combine Mixtures

    Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.

    Bake

    Pour the batter into a greased baking dish and bake at 375°F (190°C) for 25-30 minutes or until a toothpick comes out clean.

Cuban Bread

    Mix Yeast and Water

    In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 10 minutes until bubbly.

    Combine Ingredients

    In a large mixing bowl, combine the flour and salt. Add the yeast mixture and olive oil, then mix until a dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

    Shape and Second Rise

    Punch down the dough and shape it into a loaf. Place it in a greased loaf pan and let it rise for another 30 minutes.

    Bake

    Preheat the oven to 375°F (190°C) and bake the loaf for about 30 minutes or until golden brown.

Cuban Crackers

    In a large bowl, combine flour, salt, and baking powder.

    Add olive oil and water to the dry ingredients and mix until a dough forms.

    Roll Out Dough

    Turn the dough onto a floured surface and roll it out to about 1/8-inch thickness.

    Cut the dough into desired shapes and place them on a baking sheet. Bake at 400°F (200°C) for 10-12 minutes until crispy.

Whipped Butter

    Soften Butter

    Leave the unsalted butter at room temperature for 30 minutes to soften.

    In a mixing bowl, combine the softened butter, honey, and sea salt. Whip with an electric mixer until fluffy and well combined.

    Place the fruit preserves, hummus, and cream cheese in individual serving bowls. Serve at room temperature.
