    Soak the Beans

    Rinse the dried black beans under cold water to remove any debris. Place the beans in a large bowl and cover with water. Let them soak overnight or for at least 6 hours.

    After soaking, drain the beans and rinse them again under cold water.

Cooking

    Cook the Beans

    In a large pot, combine the soaked and rinsed black beans with 4 cups of fresh water. Bring to a boil over medium-high heat.

    Simmer the Beans

    Once boiling, reduce the heat to low and cover the pot. Let the beans simmer for about 1 to 1.5 hours, or until they are tender. Check occasionally and add more water if necessary to keep the beans submerged.

    Sauté Vegetables

    In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

    Combine and Season

    Once the beans are cooked, drain any excess water and add the sautéed onion and garlic mixture to the pot with the beans. Stir in cumin, salt, black pepper, and the bay leaf, mixing well.

    Finish the Dish

    Let the mixture simmer together for another 10-15 minutes to allow the flavors to meld. Before serving, stir in the lime juice and cilantro (if using).
