    Marinate the Pork

    In a large bowl, combine minced garlic, olive oil, chopped oregano, cumin, paprika, salt, black pepper, and lime juice. Mix until well combined.

    Prepare the Pork Shoulder

    Place the pork shoulder in a large resealable plastic bag or a deep dish. Pour the marinade over the pork, ensuring it is fully coated. Seal the bag or cover the dish, and refrigerate for at least 4 hours or overnight for maximum flavor.

Cooking

    Preheat Oven

    Preheat your oven to 300°F (150°C).

    Prepare Vegetables

    In a large roasting pan, place the quartered onions, chopped carrots, and chopped potatoes at the bottom of the pan.

    Roast the Pork

    Remove the pork shoulder from the marinade and place it on top of the vegetables in the roasting pan. Cover the pan tightly with aluminum foil and roast for approximately 4 hours, or until the meat is tender and falls apart easily.

    Crisp the Pork

    After 4 hours, remove the foil and increase the oven temperature to 425°F (220°C). Roast uncovered for an additional 30 minutes to crisp the skin.

    Rest and Serve

    Once done, remove the pork from the oven and let it rest for about 15-20 minutes before slicing. Serve with the roasted vegetables.
