    Prepare the Ingredients

    Chop the onions, bell peppers, and garlic. Set aside.

    Sear the Short Ribs

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the short ribs with salt and pepper. Sear the ribs on all sides until browned, about 8-10 minutes. Remove from pot and set aside.

    Sauté the Vegetables

    In the same pot, add onions, garlic, and bell peppers. Sauté until the onions are translucent, about 5 minutes.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to remove any browned bits. Allow the wine to reduce by half.

    Add Remaining Ingredients

    Stir in the canned diced tomatoes, beef broth, and fresh basil. Bring to a simmer.

    Braise the Ribs

    Return the short ribs to the pot, making sure they are submerged in the liquid. Cover and reduce heat to low. Braise for 2.5 to 3 hours, until the meat is tender.

    Finish with Cheese and Pepperoni

    In the last 15 minutes of cooking, add the provolone cheese on top of the ribs and sprinkle with pepperoni. Cover and let melt.

    Serve the braised short ribs with the pepperonata and enjoy!
