Roast the Tomatoes
Preheat your oven to 400°F (200°C). Halve the cherry tomatoes and place them on a baking sheet. Drizzle with olive oil, and season with salt and black pepper. Roast in the oven for about 20 minutes, until they are soft and slightly caramelized.

Prepare the Plate
On a serving plate, place the burrata cheese in the center. Gently tear the cheese to let it ooze out a bit.

Add the Roasted Tomatoes
Once the tomatoes are roasted, remove them from the oven and let them cool slightly. Spoon the roasted tomatoes over the burrata.

Drizzle the Pesto
Drizzle the basil pesto over the tomatoes and burrata, taking care to cover all the ingredients.

Finish with Vincotto
Finally, drizzle the vincotto over the dish for a touch of sweetness.

Garnish with fresh basil leaves and an extra drizzle of olive oil if desired. Serve immediately.
