Roast the Garlic
Preheat your oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, and wrap it in aluminum foil. Roast for 30-35 minutes until soft and caramelized.

Prepare the Spinach Pesto
In a food processor, combine the roasted garlic (squeeze out the cloves), fresh spinach, pecorino cheese, and a drizzle of olive oil. Blend until smooth. Add salt and pepper to taste.

Prep the Artichokes
Trim the stem and remove the tough outer leaves of the artichokes. Cut them in half and scoop out the fuzzy choke with a spoon.

Cook the Artichokes
In a large pot of salted boiling water, add the artichokes and cook for about 15-20 minutes until tender. Drain and let cool slightly.

Serve
Drizzle the spinach pesto over the artichokes, sprinkle with lemon zest, and additional pecorino cheese if desired. Serve warm.
