Prepare and Combine
If using egg white, separate an egg and measure 0.5 oz (about half an egg white). Add 2 oz bourbon or rye, 0.75 oz sweet vermouth, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, 0.5 oz egg white (optional), and 2 dashes Angostura bitters to a cocktail shaker.

Dry Shake (if using egg white)
Seal the shaker and shake vigorously without ice for 10–15 seconds. This 'dry shake' helps emulsify the egg white and create a silky foam.

Wet Shake
Open the shaker, add ice (about 4 oz or enough to fill shaker halfway), reseal and shake hard for 12–18 seconds until the shaker is cold to the touch and properly diluted.

Strain and Serve
Place a large ice cube in a rocks glass (or use no ice for a slightly stiffer cocktail). Double-strain the cocktail into the glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any coagulated egg solids. If you omitted egg white, a single strain is fine.

Finish with Bitters
Garnish with 1 maraschino or brandied cherry and a lemon twist. Optionally, add 1–2 extra drops of Angostura bitters on the foam and use a toothpick to create a small swirl for presentation.
