Method
Make Hibiscus-Infused Tequila
Prepare infusion
Lightly toast the dried hibiscus flowers in a dry skillet over medium-low heat for 30–60 seconds just to wake up the aroma. Transfer flowers to a clean, dry 16-oz jar.
Let the tequila steep at room temperature out of direct sunlight for 6–12 hours for a bright floral note and vivid color. Check color and taste at 6 hours; longer (up to 24 hours) yields stronger flavor but can become tart/bitter.
When infusion reaches desired flavor, strain tequila through a fine-mesh sieve lined with a coffee filter or cheesecloth into a clean bottle to remove all solids. Discard hibiscus solids.
Store the hibiscus-infused tequila sealed in the refrigerator or a cool dark place. It will keep several months; flavor is best within 4–8 weeks.
Make Honey Syrup (1:1)
Build the Cocktail (per serving)
Prepare glass: rub a lemon wedge around the rim of a rocks glass, then dip the rim into a small plate with Tajín (or Tajín mixed with a little coarse salt if you prefer). Set glass aside.
Fill a cocktail shaker with ice (about 1 cup). Add 2 oz hibiscus-infused tequila, 0.75 oz fresh lemon juice, and 0.5 oz honey syrup.
Shake vigorously for 12–15 seconds until well chilled and slightly frothy.
Strain into the Tajín-rimmed rocks glass over fresh ice (or serve neat in a coupe if you prefer).
Garnish with a lemon wheel or wedge. Sprinkle a tiny pinch (about 1/8–1/4 tsp) of extra Tajín on top of the cocktail if you want an accent of chile-lime on the surface.
Serve immediately.
Batch Notes / Scaling
To make a 1-liter batch of infused tequila, scale dried hibiscus to roughly 3/4 cup per 750 ml tequila and adjust steep time accordingly. For a pitcher of cocktails, multiply the per-serving cocktail ingredients and keep honey syrup refrigerated.
