Prepare Glass

Rim
Run the lime wedge around the rim of a highball or Collins glass. On a small plate, mix the granulated sugar and optional fine sea salt. Dip the glass rim into the sugar mixture to coat evenly. Set the glass aside.

Dry Shake
In a cocktail shaker, combine blanco tequila, fresh pink grapefruit juice, fresh lime juice, simple syrup, and the egg white. Do a dry shake (shake without ice) vigorously for 12–15 seconds to emulsify the egg white and build foam.

Wet Shake
Add ice to the shaker (about 4–6 medium cubes). Shake again vigorously for 10–12 seconds to chill and dilute the drink. This second shake both chills and further aerates the egg white for a silky texture.

Strain
Double-strain the shaken cocktail into the prepared glass over fresh ice (use a fine mesh strainer in addition to the shaker strainer) to remove small ice chips and any solids so the foam sits cleanly on top.

Top
Top the drink with about 2 oz of club soda poured gently over the back of a spoon to preserve the foam layer.
Finish

Express the oils of the grapefruit twist over the drink by holding the twist skin-side down above the surface and pinching, then drop the twist or place a grapefruit wheel on the rim as garnish. Optionally, place the lime wedge on the rim. Serve immediately.
