Ginger Syrup

Ginger Syrup

    Make ginger infusion

    Combine the chopped fresh ginger and 1 cup water in a small saucepan. Bring to a simmer over medium heat, then reduce heat and simmer gently for 15 minutes to extract ginger flavor.

    Sweeten and finish

    Add 1 cup granulated sugar to the saucepan, stir until dissolved. Simmer for 3–5 more minutes until slightly thickened. Remove from heat, stir in 2 tablespoons fresh lemon juice to brighten the syrup.

    Strain & cool

    Strain the syrup through a fine mesh sieve or cheesecloth into a heatproof container, pressing on solids to extract liquid. Discard solids. Let the syrup cool to room temperature, then refrigerate. Yields about 1 to 1 1/4 cups ginger syrup.

Mint Syrup

    Combine and heat

    In a separate small saucepan, combine 1 cup water and 1 cup granulated sugar. Heat gently, stirring until the sugar dissolves and the mixture comes just to a simmer.

    Infuse mint

    Remove the pan from heat, add the packed fresh mint leaves, pressing them gently into the syrup so they are submerged. Let steep for 15 minutes for a bright mint flavor.

    Strain & cool

    Strain out the mint leaves through a fine mesh sieve, pressing lightly to extract flavor. Cool to room temperature and refrigerate. Yields about 1 to 1 1/4 cups mint syrup.

Build the Ginger Jojo

    Prepare glass

    Select a tall glass (12–16 oz). Add 1 cup of ice to the glass.

    Add cucumber and juices

    Place the thin cucumber slices into the glass (reserve a couple for garnish). Pour in 1 ounce fresh lime juice and 1/2 ounce fresh lemon juice. Lightly muddle the cucumber and juices 3–4 times to release cucumber aroma without pulverizing it.

    Add syrups

    Pour in 1.5 ounces prepared ginger syrup and 1/2 ounce prepared mint syrup. Give the mixture a gentle stir to combine with the cucumber and citrus.

    Top with soda

    Gently top the glass with 6 ounces chilled soda water. Stir once gently to integrate — do not over-stir to preserve carbonation.

    Garnish & serve

    Garnish with the reserved cucumber slices, 2 lime wheels or wedges, and 2 sprigs of fresh mint. Serve immediately with a straw or cocktail pick.
