    Prepare glass

    Chill an old-fashioned (rocks) glass by filling it with ice water and set aside while you build the cocktail.

    Measure ingredients

    Measure 1.5 oz bourbon, 0.75 oz Averna, 0.75 oz Aperol, 0.25 oz fresh lemon juice, 0.25 oz simple syrup, and 1 dash Angostura bitters.

    Combine and stir

    Discard the ice water from the chilled glass. In a mixing glass or shaker filled with mixing ice (about 1 cup), add bourbon, Averna, Aperol, lemon juice, simple syrup, and bitters. Stir gently with a bar spoon for 20–30 seconds until well-chilled and properly diluted (mixing glass should frost slightly).

    Strain

    Place 2–3 fresh ice cubes into the chilled rocks glass. Double-strain the cocktail from the mixing glass into the serving glass using a Hawthorne strainer (and fine mesh strainer if available) to keep small ice shards out.

    Garnish and finish

    Express the oils of a lemon twist over the drink by holding the twist over the surface and giving it a sharp bend, then rub the peel on the glass rim and drop it into the cocktail as a garnish. Serve immediately.
