Method

Cocktail

  1. 1

    Chill glass (optional)

If you prefer a very cold drink, place a large wine glass in the freezer for 10–15 minutes or fill it with ice and cold water for 1–2 minutes, then discard the water before building the cocktail.

  2. 2

Fill a large wine glass about three-quarters full with fresh ice cubes. Using fresh ice keeps dilution controlled and the drink cold.

  3. 3

Add the Prosecco first: pour 3 oz (90 ml) of chilled Prosecco into the glass. Pouring Prosecco first helps preserve its bubbles when you add the other ingredients.

  4. 4

Add the Aperol: measure and pour 2 oz (60 ml) of Aperol over the Prosecco. Pour gently so the liquids layer slightly and mix naturally without losing too much effervescence.

  5. 5

Top with club soda: add 1 oz (30 ml) of chilled club soda (or sparkling water) to give a light, bubbly finish. Adjust to taste if you prefer a less or more diluted finish.

  6. 6

Gently stir once with a bar spoon (one or two slow turns) to integrate the ingredients while preserving carbonation.

  7. 7

Garnish with an orange wheel: place one fresh orange wheel on the rim or float it in the drink. If desired, lightly squeeze the wheel over the drink before dropping it in to release a touch of orange oil and juice.

  8. 8

Serve immediately while cold and bubbly.
