Prepare the Watercress Salad

Rinse the watercress thoroughly and place it in a salad bowl. Season with salt and pepper to taste.

Cook the Salmon

In a large skillet, heat olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Place the fillets skin-side down in the skillet and cook for about 4-5 minutes until the skin is crispy.

Add Garlic and Honey

Flip the fillets and add minced garlic to the skillet. Cook for another 2-3 minutes, then drizzle honey over the salmon. Cook for an additional 1-2 minutes to glaze the salmon.

Make the Sauce

Remove the salmon from the skillet and set aside. Pour the chardonnay into the skillet, scraping the bottom to deglaze. Let it simmer for 3-4 minutes until slightly reduced.

Serve

Place the watercress salad on plates, top with the honey-glazed salmon, and drizzle the chardonnay sauce over the top.
