Method

Prepare the Ravioli

Make the Dough

In a large bowl, combine flour and salt. Create a well in the center and add eggs. Mix until a dough forms, then knead for 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

Prepare the Filling

In a skillet, cook ground beef until browned. Mix with Parmesan cheese, salt, and pepper. Let cool.

Roll and Fill

Roll out the dough thinly. Cut into circles, place a small amount of filling in the center of each, and fold over, sealing the edges.

Make the Confit Cherry Tomatoes

Prepare the Tomatoes

Preheat oven to 300°F (150°C). Combine cherry tomatoes, olive oil, minced garlic, fresh basil, and salt in a bowl. Spread on a baking sheet and roast for 1 hour.

Prepare the Porcini Mushroom Au Jus

Cook the Mushrooms

Soak dried porcini mushrooms in warm water for 30 minutes. Sauté onions in olive oil until translucent. Add the soaked mushrooms, beef broth, red wine, and thyme. Simmer for 20 minutes.

Make the Herb Goat Cheese

Combine Ingredients

In a bowl, mix goat cheese with fresh herbs, olive oil, and minced garlic until smooth.

Cook the Ravioli

Boil the Ravioli

Bring a large pot of salted water to a boil. Cook ravioli for 3-4 minutes until they float. Drain and set aside.

Assemble the Dish

Plate the Dish

On a plate, arrange ravioli, top with confit cherry tomatoes, drizzle with porcini mushroom au jus, and garnish with herb goat cheese.
