Directions
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper. Set up a breading station with three shallow plates: one with flour, one with beaten eggs, and one with breadcrumbs.
- 2
Bread the Chicken
Coat each chicken breast in flour, shaking off the excess. Dip it into the beaten eggs, then coat with breadcrumbs, pressing to adhere.
- 3
Cook the Chicken
In a large skillet, heat olive oil over medium heat. Fry the breaded chicken breasts for about 4-5 minutes on each side until golden brown. Transfer to a baking dish.
- 4
Assemble the Dish
Top each fried chicken breast with fresh tomato sauce and shredded mozzarella cheese. Sprinkle with chopped basil.
- 5
Bake
Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
- 6
Serve
Remove from the oven and let it cool for a few minutes before serving. Enjoy your Pollo Parmigiana!
