Ravioli Dough

Vodka Tomato Sauce

Method

Ravioli Dough Preparation

  1. 1

    Make the Dough

In a large bowl, mix the flour and salt. Create a well in the center and add eggs and olive oil. Gradually incorporate the flour into the eggs until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Filling Preparation

  1. 2

    Prepare the Filling

In a skillet, sauté chopped spinach in a bit of olive oil until wilted. In a bowl, combine ricotta, sautéed spinach, Parmesan, nutmeg, salt, and pepper. Mix well until smooth.

Ravioli Assembly

  1. 3

    Form the Ravioli

Roll out the dough thinly on a floured surface. Cut into squares. Place a spoonful of filling in the center of each square. Fold over to form a triangle and seal edges tightly. Repeat until all dough and filling is used.

Vodka Tomato Sauce Preparation

  1. 4

    Make the Sauce

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in crushed tomatoes and vodka. Simmer for 10 minutes, then add heavy cream. Season with salt and pepper, and stir in fresh basil.

Cooking Ravioli

  1. 5

    Cook the Ravioli

Bring a large pot of salted water to a boil. Gently add ravioli and cook for 3-4 minutes until they float to the surface. Remove with a slotted spoon and transfer to the sauce.

Serving

  1. 6

    Serve

Toss the cooked ravioli gently in the vodka tomato sauce. Serve hot, garnished with additional basil and grated Parmesan if desired.
