Pasta Preparation

Make the Pasta Dough
In a large bowl, combine flour and salt. Make a well in the center and add eggs. Mix until a dough forms, then knead for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Roll Out the Pasta
Divide the rested dough into 4 pieces. Roll each piece through a pasta machine or with a rolling pin until thin. Cut into sheets approximately 8x5 inches.
Beef Ragu Preparation

Cook the Ragu
In a large skillet, heat olive oil over medium heat. Add onions, carrots, and celery, cooking until soft. Add garlic and cook for another minute. Increase the heat, add ground beef, and brown it. Pour in red wine, simmer until reduced by half. Stir in crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 30-40 minutes.

Layer the Lasagna
Preheat the oven to 375°F (190°C). In a baking dish, spread a layer of beef ragu, followed by a layer of pasta sheets, then a layer of bechamel sauce, and a layer of mozzarella cheese. Repeat the layers until all ingredients are used, finishing with bechamel and mozzarella on top. Sprinkle with Parmesan cheese.
