Making the Pasta Dough

Mixing Ingredients
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Using a fork, gently beat the eggs and gradually incorporate the flour until a dough starts to form.

Kneading the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Rolling the Dough
After resting, divide the dough into four pieces. Keep the pieces you are not currently using covered. Roll out one piece of dough using a pasta machine or rolling pin until thin (about 1/16 inch thick).

Cutting the Pasta
Cut the rolled dough into your desired shape (fettuccine, lasagna sheets, etc.) using a sharp knife or pasta cutter. Dust with flour to prevent sticking.

Boiling the Pasta
Bring a large pot of salted water to a boil. Add the fresh pasta and cook for 2-4 minutes, or until al dente. Drain and reserve some pasta water.

Preparing the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the cherry tomatoes and cook for 5-7 minutes until softened.

Combining Pasta and Sauce
Add the cooked pasta to the skillet, tossing to combine. If the sauce is too thick, add a little reserved pasta water. Stir in fresh basil and season with salt and pepper to taste. Serve hot, topped with grated Parmesan.
