Making the Cavatelli

Prepare the Dough
In a mixing bowl, combine all-purpose flour and semolina flour. Make a well in the center and add the egg. Gradually mix in water until a dough forms.

Knead the Dough
Knead the dough on a floured surface for about 8-10 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.

Shape the Cavatelli
Divide the dough into smaller pieces. Roll each piece into a 1/2-inch thick rope, then cut into 1-inch pieces. Use a fork to shape each piece into cavatelli.

Cook the Pasta
Boil salted water in a large pot. Cook the cavatelli for about 3-5 minutes until they float. Drain and set aside.
Making the Pistachio Cream Sauce

Blend the Sauce
In a blender, combine pistachios, heavy cream, Parmesan cheese, garlic, olive oil, salt, and pepper. Blend until smooth and creamy.

Transfer the blended sauce to a saucepan and warm over low heat, stirring frequently.
Grilling the Prawns

Grill the Prawns
Preheat a grill or grill pan over medium-high heat. Grill the prawns for 2-3 minutes on each side until pink and cooked through.
Combining Everything

Mix and Serve
Toss the cooked cavatelli with the pistachio cream sauce until well coated. Plate and top with grilled prawns. Serve immediately.
