Select ripe raisin grapes and wash them thoroughly. Spread them out in a single layer to dry in the sun for about 3-5 days until they are shriveled.

Fermentation
In a clean fermentation vessel, combine the dried grapes with water and sugar. Sprinkle the white wine yeast over the mixture. Stir gently to combine.

Primary Fermentation
Cover the vessel with a clean cloth and let it ferment at a stable temperature (around 18-20°C) for 2-3 weeks, stirring daily until bubbling has slowed.

Siphoning and Aging
Once fermentation is complete, siphon the liquid into oak barrels for aging. Allow it to mature for at least 6 months to develop complex flavors.

After aging, filter the wine and bottle it in 375 ml bottles. Seal tightly and store in a cool, dark place.
