    Prepare the Mushrooms

    Soak the dried porcini mushrooms in warm water for about 20 minutes, then drain and chop them. Set aside.

    Sear the Veal Chop

    Season the veal chop with salt and black pepper. Heat olive oil in a grill pan over medium-high heat. Sear the veal chop for 5-6 minutes on each side, or until the internal temperature reaches 145°F for medium-rare. Remove from the pan and let it rest.

    Make the Sauce

    In the same pan, add butter, then sauté minced garlic and chopped shallots until translucent. Add the chopped porcini and sliced shitake mushrooms, cooking until softened.

    Deglaze the Pan

    Pour in the white wine and scrape the bottom of the pan to deglaze. Allow it to simmer for 3-4 minutes until slightly reduced.

    Add Broth and Finish Sauce

    Add chicken broth and let it simmer for another 5 minutes. Adjust seasoning with salt and pepper to taste.

    Slice the veal chop and serve it on a plate topped with the mushroom sauce. Garnish with fresh parsley.
