    In a saucepan over medium heat, combine the white wine and shallots. Bring to a simmer and reduce by half. Add the heavy cream and Dijon mustard, stirring continuously until the sauce thickens. Stir in the chopped tarragon and season with salt and pepper to taste. Set aside.

    Heat olive oil in a skillet over high heat. Season the Ahi tuna fillets with salt and pepper. Sear the tuna for about 1-2 minutes on each side, depending on your preferred doneness. The center should remain rare for the best flavor.
