    Grill the Vegetables

    Preheat the grill or grill pan over medium heat. Slice the zucchini, eggplant, and bell peppers into even strips. Toss all the vegetables (zucchini, red bell pepper, yellow bell pepper, tomatoes, asparagus, and eggplant) with olive oil, salt, and black pepper.

    Cook the Vegetables

    Place the prepared vegetables on the grill and cook for about 5-7 minutes on each side until tender and grill marks appear.

    Layer the Terrina

    In a serving dish or terrine mold, start layering the grilled vegetables. Begin with a layer of zucchini, followed by a layer of eggplant, then peppers, tomatoes, and asparagus. Crumble goat cheese between the layers as desired.

    Finish with Dressing

    Once all layers have been added, drizzle the aged balsamic vinegar over the top and finish with a drizzle of extra virgin olive oil.

    Let it rest for a few minutes before slicing. Serve warm or at room temperature.
