Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Cook the Shrimp
Add the jumbo shrimp to the skillet, season with salt and black pepper, and cook for about 2-3 minutes on each side until they turn pink and opaque.

Add Vegetables
Stir in the shitake mushrooms and grape tomatoes. Cook for an additional 3-4 minutes until the tomatoes are softened.

Deglaze with White Wine
Pour in the white wine, bringing the mixture to a simmer. Allow it to cook for about 2 minutes, letting the alcohol evaporate and the flavors meld.

Finish with Herbs
Stir in the chopped chives and basil, cooking for another minute before removing from heat.

Serve the scampi hot, garnished with additional fresh herbs if desired.
